2 tbsp butter, ghee or marjarine
2 large leeks, chopped
1 large onion, chopped
1 large potato ( white or sweet), cubed
2 c butternut squash, cubed ( I like more)
1 c carrots, diced
1 Granny Smith Apple, cubed
1 quart chicken broth
1/2 c light cream (if not paleo), or coconut cream
1/4 tsp ground nutmeg
Cinnamon, salt and pepper to taste

Directions:
Directions:
Melt butter in large pot. Add leek and onions to pot and cook 5 min or till translucent. Add potato, squash, carrots, Apple and chicken broth. Bring to a boil and then cover the pot and reduce to medium-low. Simmer until the vegetables are soft approximately 20 min. Purée. Add cream, seasonings and serve.
