4 acorn squash
2 tbsp olive oil
1 large onion, diced
1 11 oz package baby spinach, stems removed
1 8 oz package mushrooms, finely chopped
3 garlic cloves, minced
1/2 tsp cinnamon
1/4 tsp nutmeg
1 lightly oiled ( or parchment paper) baking sheet

Preheat oven to 375 F. Cut acorn squash in half and remove their seeds. Place down on baking sheet for 45 min. While the squash is in the oven, add olive oil to frying pan over medium heat. Add onion and cook 10 min. Add mushrooms to the onions and cook another 5 min. Add spinach and cook another 3 min or until wilted. Finally add remaining ingredient and cook another 2 min stirring constantly. Once squash is cooked, remove from the oven and add spinach mixture into the squash. Cook another 15 min in the oven.
