2 cups coconut milk
2 eggs
1/2 c organic sugar
1/3 c coconut/ arrowroot flour mixture ( see notes)
Pinch of salt
1 tsp vanilla

Directions:
Directions:
Mix sugar and flour together in a glass microwaveable bowl. Add the eggs and pinch of salt. Mix until combined. Slowly add the milk to the mixture while stirring. Microwave on high for 8 minutes stirring the mixture every 2 minutes until thickened. When done remove from microwave and stir in vanilla. Pour into containers to let cool.

Add two tablespoons for arrowroot starch to the 1/3 c and add the rest of the cup with coconut flour. If you do not add the arrowroot starch the pudding will be runny. This pudding can be used for cream pies.
