1 lb linguini or other long pasta
2 tbsp Virgin olive oil
2 oz Pancetta, Canadian bacon or salt pork – diced
1 tbsp finely minced onion
1 clove garlic, finely minced
3 eggs -- beaten
¼ cup grated Parmesan/Romano cheese
dash of black pepper
3 oz pasta water (or two small ladles)

Cook pasta per pkg directions in salted water until al dente. While pasta is cooking, sauté Pancetta in large (12") nonstick skillet with olive oil, add onion and garlic. Cook over low heat until golden and remove from heat.
Add a small ladle of pasta water to skillet to stop pork from cooking any further. Meanwhile break eggs in small bowl, add cheese and black pepper and mix thoroughly. When pasta is cooked, drain (reserving a ladle of its water) and add pasta to pork mixture in skillet and stir thoroughly add egg mixture, mix completely - return skillet to low flame and cook, stirring to mix completely. Add the remaining ladle of pasta water and stirring constantly, cook for about another minute. Sprinkle with more grated cheese and serve immediately.
