4 c. shredded sharp cheddar cheese
1 (4-oz.) can chopped green chilies
4 Tbsp. chopped jalapenos
4 Tbsp. fresh chopped cilantro
1 c. mayonnaise
2 c. sour cream
2 tsp. chill garlic sauce
4 (11-oz.) cans whole kernel corn, drained and roasted OR 3 (1-lb.) bags of frozen corn, thawed
2 Tbsp. cumin
salt & pepper to taste

Directions:

Toss corn with olive oil, salt, and pepper. Roast in 450 F oven for 5 minutes. Combine cheese, green chilies, jalapenos, cilantro, cumin, mayonnaise, sour cream, and chili garlic sauce in a large bowl; mix well. Stir in the corn and salt. Chill for 8 hours or longer. Serve with corn chips.
Can be served warm as well.... garnish with chopped tomato and chopped cilantro.
Yield: 2.5 qts. - 1 qt. for every 25 people

I like to serve warm and with multi colored chips. We served this at Heit's Point fundraiser, at church gathering, etc. Well received. The recipe came from a caterer for whom I worked for a while a few years ago.
