6 cups cooked potatoes, diced
1 onion, finely chopped
1 cup celery, finely chopped
1 cup dill pickle, chopped
1 cup sweet relish, drained
8 hard-boiled eggs, chopped
salt and pepper to taste
1 1/4 cups mayonnaise
1/2 cup sour cream

Directions:
Directions:
In a large bowl, combine potatoes, onion, celery, dill pickles, pickle relish and chopped eggs. Season with salt and pepper; add mayonnaise and sour cream. Chill for several hours. Tip: To prepare the potatoes, cook them until done, but still firm. Remove the potatoes from the water and place in a plastic bag; let cool on the kitchen counter. Peel the cooked potatoes and dice. Sprinkle with salt and a teaspoon of olive oil; mix well.

This was Maya Angelou's family recipe handed down from her grandmother. She made it on the "Today Show" when she was trying to promote her new cookbook. Of course, being a "potato salad connoisseur," I copied down the recipe and made it that day. It was everything a great potato salad should be; creamy and loaded with eggs. If you love potato salad, you will definitely enjoy this recipe!
