3 c. cornmeal
3 c. buttermilk
4 eggs
1 can mexi-corn
2 c. onion
2 c. shredded cheese
1/2 c. oil
pinch of salt
(optional Jalepenos if you like it hotter)

Directions:
Directions:
Preheat oven to 415 degrees. Spray 13x9 pan with cooking spray. Mix Cornmeal, buttermilk, eggs and oil until well mixed. Add onion, cheese and mexicorn (optional jalapenos). Pour in to dish and cook 30-40 minutes (until toothpick comes out clean).
