1 pound red beans
2 medium onions chopped
5 or 6 toes garlic chopped
4 Green onions chopped
¼ cup parsley chopped
1 ham hock or cubed ham seasonings
½ pound pickled rib tips or salt pork
1 pound smoked sausage cut into ½ inch pieces
Salt to taste
Black pepper to taste
Dash cayenne pepper

Directions:
Directions:
Add beans to a large pot with a cover.

Cover beans with water, and mix the beans with your hand and remove any “ugly” beans.

Add onions and garlic, and bring to a boil.

Boil for 1½ hours, adding water if necessary.

Parboil the rib tips or salt pork, then drain.

In a frying pan, fry the smoked sausage in a little oil.

Add fried meat and oil to beans.

Add seasonings to beans.

Lower fire, cover and cook until creamed.
