1 goose (4-6 pounds)
4 teaspoons salt
2 teaspoons ginger
2 teaspoons dried basil
1 teaspoon freshly ground black pepper
1 1/2 cups honey
1/2 cup butter
2 teaspoons orange peal
1/4 cup orange juice
1 Tablespoon fresh lemon juice
1/4 teaspoon dry mustard
2 oranges pealed and quartered

Wash goose and soak in milk or salted water in refrigerator overnight. Pat dry and place in roasting pan. Mix slat, ginger, basil, and pepper. Rub goose inside and out. In double boiler mix the rest of the ingredients except oranges until it becomes like syrup (do not caramelize). Coat goose with 3 tablespoons of syrup. Put organs and oranges in body cavity with 1/4 cup syrup and truss. Pour remaining syrup over goose. Cover with foil. Bake at 375 degrees for 2 hours. Remove foil, baste with pan juices, and cook at 325 degrees an additional 30 minutes
