2 CANS (16 OUNCES TOTAL) CUT OKRA DRAINED
1 MEDIUM ONION CHOPPED
1 SMALL RED PEPPER
1 SMALL GREEN PEPPER
8 CUPS CHICKEN BROTH
1 CAN 28 OZ WHOLE TOMATOES UNDRAINED
1 1/2 TSP SALT
DASH OF PEPPER
1 SMALL BAY LEAF
3 CUPS CUT UP COOKED CHICKEN
COOKED RICE

MELT MARGARINE IN POT OVER LOW HEAT, COOK OKRA, ONION, AND PEPPERS IN MARGARINE, STIRRING OCCASIONALLY, COOK UNTIL ONION IS TENDER. STIR IN BROTH, TOMATOES, SALT, PEPPER, AND BAY LEAF. BREAKING UP TOMATOES. SIMMER UNCOVERED 15 MINUTES. STIR IN CHICKEN AND HEAT UNTIL HOT REMOVE BAY LEAF AND SERVE OVER RICE.
