Peanut Brittle Recipe

3 cups granulated sugar
2 cups water
3/4 cup light karo syrup
3/4 cup dark karo syrup
2 cups spanish peanuts
2 TBS butter cubed
1 TBS baking soda
1 teaspoon vanilla

1. Line 3 jellyroll pans with parchment paper (Do not spray or grease)
2. In large heavy saucepan combine sugar, water and corn syrups, stirring constantly bring to a boil stirring constantly. With candy thermometer it should reach 260.
3. Stir in peanuts and butter and cook to 300. (approx 9 min)
4. Remove from heat, stir in baking soda and vanilla (mixture will foam).
5. Immediately pour into prepared pans spreading as thin as possible. Cool completely and breaks into pieces.
