1 cup graham cracker crumbs
1 cup plus 3 Tbsp sugar
3 Tbsp melted butter
2 1/2 pounds softened cream cheese
1 1/2 tbsp. corn starch
1 Tbsp vanilla
3 eggs
1 cup sour cream

Directions:
Directions:
Mix gramham cracker crubs with 3 Tbsp sugar and melted butter. Press into 9 inch springform pan and bake at 350 for 10 minutes.
Beat cream cheese, 1 cup sugar corn starch and vanilla until well blended. Add eggs, mixing just until blended. Blend in sour cream and pour over crust. Bake at 350 for 1 hour or until center is almost set. Shut oven off and leave oven door open for 30 minutes with cheesecake in oven. remove cheesecake and continue to cool. Run knife around rim of pan to loosen cake, cool before removing rim of pan. Best if refrigerate overnight
