2 loin pork chops
1/2 cup flour
1 tsp dried oregano
1 tsp dried thyme
Olive oil
1/4 cup chopped onions
2 tsp minced garlic
1 can crushed tomatoes
1/4 cup red wine
3/4 cup mixed cheeses (cheddar, parmesan and mozzarella)
Salt & pepper to taste

Preheat oven to 180c.
Mix together the flour, oregano, thyme, salt and pepper. Coat both sides of the chops and then place into a frypan with the olive oil. Heat just enough to brown both sides. Remove from the pan. Add onions and garlic to same pan and gently fry until tender, add the tomatoes and wine and cook for a further 5 minutes until slightly reduced. Pour half the tomato mixture into individual ceramic dishes, then place one pork chop on top then add remaining tomato mixture, then cover with the cheeses. Bake in the oven for about forty minutes. Serve with a side salad and a baked potato
