250gm plain flour
1 tsp bicarbonate of soda
Touch of salt
115gm butter
115gm brown sugar
2 beaten eggs
500gm very soft bananas.

Directions:
Directions:
Preheat oven to 175c.
Grease and line a loaf tin. (23x13cm)
In your faithful mixing machine combine flour, baking soda and salt. In a separate bowl cream together butter and sugar. Stir in the eggs and mashed bananas until well combined. Add this mixture to the dried ingredients and mix until just combined. Do not over mix.
Pour mixture into tin and bake for between 60 - 65 minutes until tester comes out clean. Allow to cool, then place onto a wire rack
