whole organic chicken

Optional:
Small handful of rinsed dried conch meat (available in Chinatown, in a Chinese herbal store where dried goods are sold)
Few goji berries
1 honeyed dried date
1 or 2 dried figs
or, some dried sweet fruit, like dried loongan

The optional ingredients are used to enhance the flavour of the soup.

Add cold water to the pot so it covers the chicken by 1 inch.

Bring the water to a boil and simmer for 3 hours.

Adding carrots to the soup will diminish the rich chicken flavour of the soup.

This soup is made by Joyce and Jane for Mother when her appetite was low after a short hospital stay. It must have worked. TPP can't stop eating!
