1/2. Cup soy sauce (low sodium)
2 Tablespoonfuls lemon juice (usually the juice of 1 lemon)
1 Tablespoonful white sugar
1 clove garlic, pressed
1/2 teaspoonful ground ginger
2 Tablespoonfuls any type of cooking oil
1 Tablespoonfuls white sesame seeds
This will make enough marinade to do 1 pound of boneless chicken breasts and enough vegetables to make app. 8 skewers.
Vegetable suggestions: mushrooms, grape tomatoes, diced bell peppers(all colors) diced onion (red,yellow). Dice boneless chicken breasts & vegetables the same size to assure uniform grilling. Make marinade-I usually divide in half and add to 2 -1 gallon zip lock bags. Add chicken to one and vegetables to the other. Marinate in refrigerator 1 hour to overnight turning bags a few times. Assemble skewers, alternating chicken and vegetables. Grill app 4-5 minutes/side @ 425 degree on bbq grill.
