2 T. Butter
2 T. Olive oil
One 10 oz. package of fresh Spinach
One medium Onion
1/2 to 1 c. Parmesan cheese, grated
1/2 to 1 c. Provolone cheese, grated
8 large Eggs
1/4 c. Milk
1 tsp. Salt
1/2 tsp. Pepper
1/4 c. fresh basil or 1 T. dried
Chopped plum tomatoes for garnish

Preheat oven 350º

Melt butter and oil in a 12 inch oven proof skillet on medium high heat.

Cook onion and basil, salt, and pepper until tender and add spinach until wilted

Remove from heat and top with grated cheeses.

Whisk eggs and milk together and pour over vegetable cheese mixture.

Bake for 15 to 20 minutes until set.

Turn the broiler on to slightly brown the edges.

Garnish with tomatoes.

Sometimes I use two medium zucchini, thinly sliced. Also, I change up the cheeses with a little bit of cheddar added.
