1 lb. ground meat
1 small onion, chopped fine
1/4 cup raw rice
salt pepper

meat stock........2 cups beef broth

Directions:
Directions:
Combine meat, onion, rice,egg, slat and pepper, (adding an egg is optional)
Roll meatballs in flour and drop into simmering stock, cook for 20 minutes. Prepare avgolemeno suce and pour over meatballs. Let stand for a few minutes, shaking pot to distribute evenly!!

The original recipe calls for mint and parsley..........I have never added this...............up to you......1/4 tsp. of each!!
Great for a cold winter night!!
