1 bag Chili Fritos
2 cans drained sweet yellow corn chill in fridge so it is cold.
1/2 finely chopped onion
1/2 finely chopped green pepper
1 to 2 cups mild cheddar cheese
1 cup mayonnaise

Directions:
Directions:
This salad needs to be put together just before serving. For picnics I like to
Mix onion, corn, pepper and mayo all together.
Put this mixture into a serving bowl
Now cover the mixture with the cheese so the Fritos will be protected from the moist mayo and corn.
Break up the chili Fritos in the bag and dump on top of cheese. Cover with seran wrap and stir just before serving.

Quick and easy! Can easily be doubled if needed.
One bowl is enough for 10 people
