1 pound of boneless chicken breasts
1/3 cup Dijon mustard
1/4 tsp paprika
1/4 tsp salt
Fresh ground pepper
1/2 cup diced pancetta or bacon
1/2 cup diced onion
1/2 tsp dried thyme leaves
3/4 cup white wine
2 tbsp grainy mustard
2-3 tbsp heavy cream

Mix Dijon mustard, paprika, salt and pepper in bowl. Toss the chicken in marinade mixture, coating well. Set aside.

Heat a large skillet with a lid over medium high heat. Add the bacon and cook, stirring frequently, until brown. Remove bacon from pan. Leave about 1 tbsp of bacon drippings in pan or add olive oil if there isn't enough. Add onion and cook for about 5 minutes, until soft. Stir in thyme and let cook for a few minutes more. Remove onion and add to bowl with bacon.

Add a bit of olive oil to skillet and lower to medium heat. Add half the chicken to pan (best to cook in two batches as to not overcrowd the pan). Brown on both sides (about three minutes per side if using thinly sliced breasts). Remove to a plate and cook second batch, adding more olive oil if necessary. Remove second batch to plate.

To the hot, empty skillet, add the wine and stir/scrape well to loosen the brown bits on the bottom. Return the chicken, bacon and onion to the pan. Cover and cook over low-medium heat for 15 minutes, turning the chicken in the sauce periodically. Test the chicken for doneness and cook for a few more minutes if necessary.

Remove chicken from pan to a serving plate. Stir grainy mustard and heavy cream into sauce and stir just until heated through. If sauce is too thick you can thin with a little warm water. Spoon sauce over chicken.

This dish is nice with pasta, rice or mashed potatoes.
