1 lb. almonds (about 3 1/2 cups)
1 egg white
1 tsp. vanilla extract
1/2 cup brown sugar, packed
1/2 cup white sugar
1/2 tsp. salt
1 tsp. cinnamon

Directions:
Directions:
Preheat oven to 250 F.

Combine sugar, brown sugar, cinnamon, and salt in a medium mixing bowl and set aside. Combine egg white and vanilla in another medium mixing bowl and beat with a fork until frothy. Pour almonds in egg mixture and fold in with spatula until almonds are all coated. Pour sugar mixture over almonds and fold with spatula until well-coated. Pour coated almonds on greased cookie sheet. Bake at 250 F for 1 hour, stirring around almonds every 20 minutes. Let cool for an hour for crunchy texture.
