4 cups chicken broth
6 sprigs fresh parsley (do not chop, leave whole)
5-6 medium carrots, shredded
1 large onion diced
1/2 to 1 tsp. salt
1/3 cup heavy cream
1/4 tsp. nutmeg

Directions:
Directions:
Bring to boil broth, parsley, carrots and onion. Turn down to simmer until carrots are tender. Remove parsley and cool. Blend until smooth; reheat and add cream, salt and nutmeg. Serve dusted with nutmeg.
