2 cups plain flour
2 tsp baking powder or 3/4 tsp bicarbonate of soda
1/3 cup margarine or butter
1 cup sugar
2 eggs
1/2 cup milk
1 tsp vanilla extract
1-2 cups raspberries or blueberries (fresh or frozen)
extra sugar

Directions:

Pre heat oven to 180c.
In your mixing machine cream together sugar and butter. Add eggs one at a time mixing well, add milk and vanilla then the combined flour and baking powder. Fold in the berries, do not overmix.
Fill paper lined muffin cases two thirds full, sprinkle with extra sugar and bake for approx. 20-25 minutes. Test for doneness and allow to cool.
