1 Tbsp. Olive Oil
1 large Onion, peeled and chopped
4 cups Butternut Squash, peeled and cubed
3 medium Pears, peeled, cored and quartered
32 oz. Vegetable Stock
1 Tbsp. Thyme
salt and pepper to taste

Heat oil in stockpot. Add onions and squash. Cook, covered stirring occasionally, 10 min. Add pears, stock, and thyme. Bring to a boil; reduce heat to low. Simmer about 25 minutes until squash and pears are tender. Puree until smooth. Season to taste with salt and pepper..
