1 head of cauliflower (coarsely chopped)
4 oz cream cheese (softened)
1/4 grated parmesan cheese (optional)
1/2 tsp garlic powder
salt and pepper to taste
1 can of green chilis (optional)
1/4 c shredded cheddar cheese

Directions:
Directions:
Step 1) Heat oven to 350-375 F
Step 2) Boil water and cook cauliflower until soft (about 8 mins); Drain
Step 3) Mash cauliflower into a bowl (use paper towels or cloth to take out most of the moisture)
Step 4) Stir in cream cheese, parmesan cheese, garlic powder, salt and pepper and chilis if desired
Step 5) Transfer ingredients to a glass baking dish; cook for 20 minutes top dish with cheddar cheese and cook an additional 5-10 minutes.
