2 c grated zucchini using large holes of a box grater.
2 large eggs slightly beaten
1/2 c flour
1/4 c parmesan cheese
1/2 t baking powder
1/2 t salt
1/4 c oil or as needed
Footnote: I like to use self rising flour and omit the baking powder and add some chopped onion to it.

Blot grated zucchini with paper towels. Stir together zucchini, egg and onion if you want it and salt in a large bowl. Mix flour, salt and cheese in another bowl. Stir mixture into zucchini until moistened. Heat oil in large skillet over medium high heat. Drop by scant 1/4 c portions of batter and fry until golden about 2-3 minutes on each side. Drain pancakes on paper towels. If your stoves heat is too high turn to medium. Can keep warm in oven.

I like to take leftover mashed potatoes and make pancakes doing it the same way. I like them better and my family does too.
