Initial Sour Dough Starter
3/4 c. sugar
3 T. Instant Potato flakes
1 c. warm water
1/2 pkg. yeast

Feed Sour Dough Bread:
3/4 c. sugar
3 T. Instant Potato flakes
1 c. warm water

Make Bread:
1/2 c. sugar
1 c. starter
1/2 c. corn oil
1 1/2 c. warm water
1 1/2 t. salt
6 c. bread flour (Pillsbury or King Arthur)

Directions:
Directions:
After making initial starter, put in refrigerator for 3-5 days. Store starter in in a container and slit holes in the top of the cover. This mixture will not rise but will only bubble.

Feed every 3 - 5 days. After feeding, let it set out of the refrigerator all day or night. Wait until you have 4 cups of starter before beginning to make bread. Always keep at least 3 cups of starter in the refrigerator.

In a large bowl make a stiff batter with the ingredients listed for making bread.
Grease another bowl. Put dough in and turn over to put oiled side up.
Leave overnight to rise, do not refrigerate.
Next morning, punch dough down. Knead a little. Divide into 3 parts. Knead each part 8 -10 times. Put into greased loaf pans and brush with oil. Cover with greased wax paper and allow to rise in a warm place over night.

Bake for 30-45 minutes in a 325 oven. Remove and brush tops with butter.
Place on rack to cool.

If you miss a feeding, you may want to add 1/2 pkg. of yeast to the starter when feeding.
