1 1/2 pound of cooked ground beef, turkey and or spicier version sausage drained and cooled
- 1 medium size onion shopped - 1 can of kidney beans - 3/4 cup Uncooked rice - small can of chopped black olives you could leave them whole - 3/4 cup graded Cheddar cheese (my brood prefers sharp white Cheddar) - 1 green bell pepper chopped - 2 cans of canned tomatoes ( diced works best) - 1 teaspoon of sea salt - 1 teaspoon of chili powder

hopefully you have browned off your ground meat and drained the grease off by now if you have return your ground meat to the skillet then add the garlic,salt, and chili powder onion & peppers cook till the vegetables are soft but not browned. - now using cooking spray ( I like to use butter flavored cooking spray) grease a large casserole dish - place your ground meat mix into the dish pour over the canned tomatoes and beans the ground meat mix Do Not Drain the juice of the canned goods - mix well with a spoon slowly - add your rice to the mixture - bake covered with foil for 1 hour at 350 degrees - then top with cheese bake another 30 minutes - if your casserole is dry add a little tomato juice or water and bake for about 10 minutes

This is another harvest dish my grandmother would make around the time of the festival of the Goddess Athan. yup I just a country girl at heart as the humans would say.
