Zucchini Lasagna Recipe

3 Zucchini
1 lb ground beef or sausage
Minced garlic
2 jars spaghetti sauce
1 small container of ricotta cheese
1 egg
4 c mozzarella cheese
Salt & pepper

Directions:
Directions:
Preheat oven to 350. Slice zucchini thinly, lengthwise and place zucchini in a colander. Sprinkle with salt. This will drain some of the moisture.
Brown ground beef, or sausage, and garlic together. Drain. Mix in spaghetti sauce, reserve 1/2 c, and season to taste. In a small bowl mix ricotta cheese and well beaten egg.
In a 9x13 pan, spread reserved 1/2 c sauce in bottom. Layer in this order... zucchini, ricotta, meat sauce, and mozzarella cheese. Repeat and top with final layer of zucchini. Sprinkle with mozzarella and parmesan cheese. Bake 30-40 minutes or until zucchini is tender.
