4 zucchini
1 lb ground beef
1 jar spaghetti sauce
2 c mozzarella cheese
Salt & Pepper
Parmesan Cheese

Directions:
Directions:
Preheat oven to 350. Trim ends off of zucchini and scoop out pulp, leaving 1/2" in shells. Finely chop pulp. In a skillet, brown ground beef, seasoning with salt and pepper to taste. Drain beef and stir in spaghetti sauce. Stir zucchini pulp into sauce. Place zucchini boats on a cookie sheet or 9x13 pan and spoon sauce into boats. Sprinkle with mozzarella and parmesan cheese. Bake 25-30 minutes or until zucchini is tender.
