2 TBSP butter
1 Vidalia onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 TBSP butter
3 TBSP flour
2 cups skim milk
ground black pepper to taste

Directions:
Directions:
Melt 2 tablespoons butter in medium sized stock pot, and cook onion and celery until tender.
Add broccoli and broth, cover and simmer for 20 minutes, or until broccoli is super tender.
Mash broccoli with a potato masher or back of large spoon. (you can leave some pieces as they are)
In small saucepan, over medium heat, melt 3 tablespoons of butter, stir in flour and add milk. Stir until thick and hubby and add to soup. Season with pepper and serve.
