1 can beets
1 cup cider vinegar
1/2 cup sugar
1 tsp. salt
1/4 tsp. pepper
4 cloves
10-12 peeled hard boiled eggs

Directions:
Directions:
Drain juice from beets into a measuring cup. Add enough water to make 1 cup. To this juice add the vinegar, sugar, salt, pepper and cloves, then bring to a boil. Add the drained beets to this liquid while still hot. Let stand for several hours.

Remove most of the beets, (I like to keep a few) and pour over the hard cooked eggs in a very large glass jar. Place in fridge, best after 24 hours or so.

I can remember our Mom making these for our Dad. One of his favorites. Now it's one of my husband's favorites, too.
