8 medium size Red Bliss potatoes

Cream Sauce
4 T. (heaping) butter
3 T. (heaping) flour
2 1/2 cups milk
Salt and Pepper to taste

1 1/2 lbs. cheddar cheese, grated

Directions:
Directions:
Peel potatoes, cup up in bite size pieces. Boil until tender in water with 1 1/2 t. salt. Do not overcook. Drain and cool.

To make cream sauce melt butter and add flour stirring constantly until smooth.
Gradually whisk in the milk. Cook stirring constantly until thickened. Add salt and pepper.

In a rectangular baking dish place a layer of potatoes and a layer of grated cheese. Repeat layers until dish is full. Pour cream sauce over the top. Cover top with cheese.
Bake at 350º until cheese is melted and brown on top.
