Grandma Frezzo's Cauliflower Recipe

Ingredients: 1 large head fresh cauliflower ½ cup seasoned Italian breadcrumbs ¼ cup grated parmesan cheese 1 – 2 cloves minced garlic 2 Tb. Olive oil (to start, may need to add more)

Directions:Pre -heat oven to 350 degrees. Wash cauliflower and break into florets. Place in microwave safe dish; add small amount of water, and cook on high for 5 minutes (Grandma parboiled hers in a big pot of water for about 5 minutes). In the meantime mix breadcrumbs, cheese and garlic. When cauliflower is done (it should be soft but not mushy) drain and toss with breadcrumb mixture. Place in roasting pan and pour on olive oil.
Bake for about 40 minutes total. Check after 20 minutes and if mixture appears dry add more olive oil. Toss and bake for another 15-20 minutes. They’re done when browned and tender.

Notes: We’ve alternated this recipe with Grandma’s mushrooms (same basic recipe, quarter whole fresh mushrooms and proceed as directed for cauliflower but parboil on stove) every holiday for as long as I can remember. Since Grandma never measured, the amounts given here are approximate. You may need more breadcrumb mixture, depending on the size of the cauliflower. You might like more (or less) garlic—adjust to your taste.
