4 c. peeled and diced apples (4 large Granny Smith work best),
2 Eggs
2 c. Sugar
2 c. Flour
2 tsps. Baking Soda
1 tsp. Salt
2 tsps. ground Cinnamon
1 c. Vegetable Oil

Directions:
Directions:
Beat eggs lightly and pour over diced apples, folding till apples are coated. Whisk together dry ingredients. Making a small well in the center, add the oil, stirring/folding until all dry ingredients are absorbed. Stir in apple/egg mixture. The resulting batter will have the consistency of a wet cookie dough. Place batter in well-greased (I prefer baking sprays) bundt or tube pan. (Can be baked in a 9x13 pan or as cupcakes 24 regular, 18 large)

Bake at 350` for an hour. When checking, there may be a few crumbs on your testing tool.

Can't beat apples and cinnamon! This cake has the advantages of being lactose free and can be eaten any time of the day.
