1/2 cup white rice. I like basmati
2/3 c water
1 small chopped onion
1 small chopped green pepper
2 chopped celery stalks
2 cloves minced garlic
1 t paprika
1 t dried thyme
1/4 t salt
2 can chicken broth
1 8 oz can tomato sauce
2 c shredded cooked chicken breast
1 c water
1 T file gumbo powder

Directions:
Directions:
Mix rice into water and bring to a boil and then simmer for 20 minutes. Be sure to leave the lid on while it cooks. In 2 t olive oil in a pot over medium, high heat, add onion, pepper and celery, garlic, 1t paprika, thyme, salt and cook stirring 5-7 minutes until vegetables soft. Add chicken broth, tomato sauce and chicken, water and stir to mix. cook 15 minutes. Remove from heat and add file powder.
