1/4 cup + 1 tbsp Butter
1/2 cup minced Onion
1 tbsp Curry Powder
1/4 cup + 2 tbsp Flour
1 1/2 tsp Salt
1 1/2 tsp Sugar
1/4 tsp Ground ginger
2 cups Chicken broth
2 cups Milk
4 cups Cooked Shrimp or cooked Chicken (cut up)
1 tsp Lemon juice

Directions:
Directions:
Melt butter over low heat in heavy saucepan. Add onion and curry powder and saute. Blend in flour and seasonings.

Cook over low heat until mixture is smooth and bubbly.

Remove from heat and stir in chicken broth and milk.

Bring to a boil stirring constantly. Boil for 1 minute. Add shrimp or chicken and lemon juice.

Serve over rice and garnish if desired.
