1 cup butter or margarine
1 tablespoon parsley, chopped
1 tablespoon chives, chopped
1 tablespoon scallions, chopped
1/2 teaspoon salt
Pepper to taste
1 egg
1 tablespoon cold water
1 tablespoon flour
2/3 cup bread crumbs
1/4 cup butter or margarine
6 whole, boneless chicken breasts

Directions:
Directions:
1. Mix 3/4 cup softened butter or margin, parsley, chives, scallions, salt and pepper. This is your herbed butter. Shape into 6 sticks and chill until partially hardened.
2. Pound chicken breasts flat with a mallet. Roll 1 herb stick to each flattened chicken breast. and secure edges with large toothpick. Sprinkle with s&p.
3. Heat oven to 400º. Beat egg and water together for dredging. Roll rolled chicken breasts in flour, dip into egg mixture and then roll in bread crumbs, coat each breast well.
4. Sauté breasts in heated butter or margarine until golden on all sides.
5. Place chicken breasts in shallow baking dish or pan.
6. Bake for 15-20 minutes until tender.
7. Remove from pan and serve over Spaetzle or Egg Noodles
8. Pour mushroom sauce over chicken and noodles.
