Malabar Mutton curry (Kerala Style) Recipe

800 gms. Mutton
2 nos. med onions
2 tbsp. Chopped ginger
12-15 cloves garlic
3-4 green chilies
3 med tomatoes
1/2 cup oil
1 tsp geera
1 tbsp coriander
4-5 red chilies
1/2 tsp fenugreek
1/2 inch cinnamon
4-6 cardamoms
6-8 cloves
2 bay leaves
3/4 cup coconut
2 tbsp so. Poppy seeds
10-12 peppercorns
Curry leaves
1 tsp turmeric
1/2 tsp chili powder

Grind ginger/garlic & green chili. Heat oil in a pan and add jeera, coriander, red chili, fenugreek, cinnamon, cardamoms, cloves,& bay leaves. Stir for 30 secs & add coconut, poppy seeds, pepper. Once coconut becomes golden brown, switch off. Grind this mix into a thick paste. Heat oil and add mustard seeds and cook till it crackles, curry leaves. Add onion, when it becomes golden brown, add ginger/garlic and chilly paste. Mix well. Add mutton & stir continuously for 10 mins. On high flame. Add turmeric, Chili powder, salt & tomato. Cook till the oil separates from the masala. Add 4 cups of water & and let it cook. Cook the mutton nice & soft but not shredded. Add masala paste. Cook for 10 more mins. Or till the gravy becomes nice & thick.
