1 soup chicken
8 qt water
1 tbsp salt
1/4 tsp pepper
1/2 cup onion, chopped
1 cup celery, chopped (divided)
1 cup carrots, chopped (divided)
chicken bouillon to taste

Put chicken in a pot with water and salt. Cook 1/2 to 1 hour, skimming off foam as it cooks. When the foam has stopped, add onion, 1/2 cup celery, 1/2 cup carrots and pepper. Cook for about an hour or until meat comes away from the bone. Remove the chicken. Strain the broth and remove all vegetables. Return the broth to the pot and add remaining celery and carrots, cook 1/2 hour. Remove meat from the bones and add to pot. Add extra salt, pepper and chicken bouillon to taste. Let boil up and add one or more of the options below (recipes in cookbook).
