4 cups cooked mashed potatoes
8 cups raw potatoes grated (if you have a 4 sided cheese grater, it is the side that looks like outward protruding holes with spiky edges on all sides) and squeezed out through a broad cloth bag (netted gems work best)
1 tsp salt

Cheese Filling:
600 grams dry cottage cheese
2 eggs
1 tsp salt
1 tsp pepper

Directions:
Directions:
Mix the cooked potatoes, grated potatoes and salt together. Take a handful (about the side of a medium orange) of potatoe mixture, flatten slightly and fill with heaping tbsp of cheese filling. Or you can make them smaller without any cheese filling by using about the size of an egg of the potatoe mixture and roll it into a log about 3/4 x 2 1/2". Cook in boiling salt water, filled ones for about 30 minutes and smaller ones for about 20 minutes, stirring often. Serve with whipping cream. Leftovers are great fried (cut the large filled ones in half).
