1/2 package of Pot-Pie noodles (they are big square noodles in the noodle section of the grocery store)
1/2 cup butter
1 cup thinly sliced mushrooms
1/3 cup flour
2 cups chicken broth
1 cup whole milk
1/4 cup pimento
1 tsp. of salt (or to taste)
1/2 tsp. pepper
2 cups cut-up cooked chicken
1/2 cup shredded parmesan cheese

Preheat oven to 350º. Cook noodles according to package directions. Drain and set aside in large pot. In large skillet melt butter. Cook mushrooms in butter until tender. Blend in flour. Stir and cook flour for a minute. Gradually add broth, milk, pimento, salt and pepper, stirring constantly until sauce is thickened. This could take several minutes. Pour sauce over noodles and chicken. Put in greased 9x13 greased casserole dish. Top with parmesan cheese. Bake about 1/2 hour or until bubbly.

My Pennsylvania friends have shared some great recipes with me. This is one of them. My family loves this recipe. You can omit the mushrooms if you don't like them. It is delicious either way.
