Ingredients:  
1/2 pound ground beef
1/4 cup chopped onion
1/4 cup chopped celery
3/4 cup beef broth
1 can rotel
1 cup canned diced tomatoes, undrained
3/4 cup cubed peeled potato
1/4 cup thinly sliced carrot
2 tablespoons uncooked long grain rice
1/2 teaspoon salt, optional
1/8 teaspoon pepper

Directions:
Directions:
In a large saucepan, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. Stir in the broth, tomatoes, potato, carrot, rice, salt if desired and pepper. Bring to a boil. Reduce heat; cover and simmer 40-45 minutes or until rice andvegetables are tender. Yield: 2 servings.
