1-1 1/2 lbs. sweet Italian sausage, cut into 1" pieces
2 cloves garlic, minced
2 medium onions, chopped
1 can (28 oz.) whole tomatoes, mashed
2 cans (14 oz.) beef broth
1 tsp. salt
1 tsp. dried basil
1/2 tsp. dried oregano
1 T. parsley, chopped
1 green pepper, chopped
2 zucchinis, sliced thin
1-2 c. water
1/2 tsp. pepper
grated parmesan cheese
Brown sausage in a skillet, drain well. Add the browned sausage, garlic, onion, mashed tomatoes, beef broth, salt, basil, oregano, parsley, green pepper, zucchini, water and pepper into a medium to large saucepan (or crockpot). Stir well.
Stove top: Bring to a boil, cover and simmer for 2-3 hours.
Crockpot: Cook on low setting for 12-14 hours.
Serve garnished with parmesan cheese.
