Aunt Laura's Olde Time Pasties Recipe

Pastry shells (makes 6):
1 lb. lard
6 c. flour
1 T. salt
1 c. & 2 T. ice water

Filling (makes 24):
5 lbs. cooked flank steak, chopped into small bite size pieces
6 lbs. cooked pork steak, chopped into small bite size pieces
16 c. potatoes, chopped
4 large onions, chopped
3/4 large jar parsley flakes
1/3 c. salt
1/3 c. pepper
1/3 c. butter, diced into small 'pats'

Preheat oven to 425.

For the filling:
Mix flank steak pieces, pork steak pieces, potatoes, onion, parsley, salt and pepper until blended.

For the pastry shells:
Mix flour and salt until blended. Cut in lard. Add water and mix into a dough. Divide into six equal parts. Roll out one section at a time. Fill pastry with 2 c. filling mixture. Place 2-3 1/2 'pats' butter on top. Fold pastry shell in half over the mixture and seal edges.

Bake for 15 minutes. Lower heat to 350 and bake for another 45 minutes.

Serve warm with gravy (optional).
