Libby's Famous Pumpkin Pie Recipe

4 eggs lightly beaten
1 can (29 oz) LIBBY's Solid Pack Pumpkin
1 1/2 C granulated sugar
1 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
3 C (2 12 fl oz cans) undiluted Carnation's Evaporated Milk
2 9" unbaked pie crusts

Directions:
Directions:
Combine filling ingredients in order given; pour into pie crusts. Bake in preheated 425º for 15 minutes; reduce temperature to 350º. Bake an additional 40-50 minutes or until knife inserted near center comes out clean. Cool. Garnish if desired, with whipped topping. Makes 2 9" pies.

My Aunt Ardis always requested I make these for any joint Thanksgiving or Christmas dinners we attended. I'm not sure if it's just the familiarity of what we grew up with or that it's very difficult to reach the same consistency with homegrown pumpkins/squash, this was always a desired version of pumpkin pie. We loved the other home made pies as well, but nothing beats a Libby's Pumpkin Pie topped with Cool Whip!
