4 large chicken breasts
Cheese Ritz crackers (or plain ritz crackers with grated cheddar cheese)
salt and pepper to taste
milk as needed

Sauce
1 can cream of chicken soup
2 tbsp sour cream
2 tbsp butter
1 tsp dried parsley

Directions:
Directions:
Crush crackers. Cut each chicken breast into 3 - 4 large pieces. Pour milk into a small pan. Put crackers crumbs into a small pan (if using grated cheese put into a separate pan). Dip each piece of chicken into milk then into the crackers (then cheese if using). Press crumbs with fingers. Put onto a cookie sheet. Sprinkle with salt and pepper. Cover with foil and bake at 350º F for 35 minutes. Remove foil and bake for another 10-15 minutes until golden brown. For the sauce combine all ingredients with a whisk in a medium sauce pan. Stir over medium high heat until hot. Serve with chicken.
