Shortbread Crust
Ingredients:
3/4 c. all-purpose flour
3 T. sugar
6 T. butter, softened
1 egg yolk (reserve egg white for filling)
1/4 t. vanilla

Filling ingredients:
12 oz. cream cheese (1 1/2 packages), softened
6 T. butter, softened
1 egg white
1/3 c. + 1 T. sugar
1 t. vanilla
*1/4 t. almond extract (*optional)
milk as needed

Strawberry Glaze
Ingredients:
3/4 c. fresh or frozen strawberries (sliced before or mashed during cooking)
2 T. water
1/3 c. sugar
4 t. cornstarch

Directions:
Directions:
Heat oven to 400 degrees. Mix flour and sugar in mixing bowl. In a separate bowl, use pastry cutter to combine egg yolk with butter and vanilla. Add butter mixture to flour mixture and cut in with pastry cutter or by hand until it becomes a firm dough. Separate 1/2 dough and pat on bottom only (not sides) of an 8 inch pie pan. Bake for 7 minutes or until crust edges turn golden. Allow pan to cool sufficiently before patting remaining dough around the sides of pie pan. Set aside.Heat oven to 450 degrees. Beat egg white in a mixing bowl on high speed until foamy. Add cream cheese and butter. Mix together, periodically adding milk enough to cream together. Mixture should be a thickness similar to pudding. Add remaining ingredients and mix thoroughly. Add to pie pan with half cooked crust. Bake 10 minutes at 400 degrees, then reduce heat to 350 degrees and continue cooking until crust edges turn golden and bubbles appear in filling. Chill.
In a saucepan over medium heat cook strawberries and water until steaming. In a small bowl, mix cornstarch and sugar with a fork, then add to the strawberry mixture. Cook until thick and translucent, stirring regularly. Cool. Spread over chilled cheesecake and devour.
