1 box yellow cake mix
1 box instant vanilla pudding
1 1/3c. water
4 eggs
2 c. coconut
1/3 c. oil
1 c. chopped nuts

Frosting:
4 T. butter
1 8 oz. cream cheese
3 1/2 c. confectioners sugar
2 c. coconut
2 t. milk
1 t. vanilla
Directions:
Directions:
Blend cake and pudding; add water, eggs and oil. Beat at medium speed 4 minutes, stir in coconut and nuts. Mix well. Bake in 3-9inch cake pans at 350 for 30 to 35 minutes

Frosting:
Melt 2 T. butter in skillet, add coconut stirring constantly over low heat until golden brown. Spread on paper towel to cool. Cream 2 T. butter and cream cheese, add milk, sugar and vanilla. Beat untill smooth. Stir in 1 3/4 c. coconut mix well. Frost cake, then sprinkle with remaining coconut
Be sure coconut is completely cool.
