10 eggs
1/2 stick butter-melted
1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt (optional)
1 lb. small curd cottage cheese (1% works fine.) Recipe states to use 100% dairy cottage cheese and avoid brands with ingredients much beyond milk, cream, rennet and salt.
1/2 lb. Swiss cheese (shredded). Recipe calls for aged Swiss cheese. I have used aged and regular and couldn't taste a difference.
1/2 lb. Monterey Jack cheese (shredded)

Add other cooked ingredients you'd like, such as sautéed onion, mushrooms, bell peppers, ham, sausage, spinach, etc. Drain additional cooked ingredients well before adding to egg and cheese mixture.

Whip eggs until fluffy. Stir in flour, baking powder, salt, cottage cheese, melted butter, and Swiss cheese. Add other cooked ingredients you 'd like at this time, after draining well. Pour into a greased (PAM'd) 9x13 pan. Top with Monterey Jack cheese. Bake at 400º for 15 minutes. Reduce temperature to 350º and continue to cook for another 25-30 minutes, or until top is lightly brown. Cover with foil if it browns too quickly while cooking.

Great for crowds! I have made this for bridal and baby showers and work luncheons. Always a hit!
